Ingredients:
- ½ pound boneless skinless chicken breasts
- 1 small onion, finely chopped
- 1 cup frozen corn
- 3 cups of salsa
- 1 cup of chicken broth
- 1 8 oz. can tomato sauce
- 1 teaspoon of ground cumin
- ½ teaspoon of garlic powder
- 1 cup tortilla strips
- Salt and pepper to taste
- Garnishes such as chopped avocado, shredded cheese, or sour cream
Method:
- In a slow cooker, combine all ingredients except for garnishes. Stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Remove the chicken breasts from the pot and shred with two forks. Return the shredded pieces to the slow cooker.
- Stir in the garnishes and serve.
